Starving Student: Light up your tastebuds with homemade pizza
Cooking delicious food often means a time commitment, a sink full of dishes, and a slightly lighter wallet. However, as I have discovered, this formula doesn’t always ring true.
Tortilla Pizza is a delicious little recipe I learned about from my roommate that only calls for four simple ingredients, involves no measuring and takes only about 10-15 minutes to bake. And here’s the kicker, since you bake it on a sheet of tin foil and eat the pizza with your hands there will be next to no kitchen clean up after you eat.
This recipe is great because everyone can make his or her own pizza with however many toppings they want. First, pre-heat the oven to 450º and measure out a piece of aluminum foil big enough to comfortably fit the tortilla on. Spray the foil with cooking spray and place the tortilla down on top.
Then assemble your pizza, spreading the sauce evenly over the tortilla, you may make this layer as thick or thin, as you desire. Then scatter the shredded cheese over top of the pizza careful not to get it too close to the edges as this will make it harder to remove it from the foil after baking. Lastly, thinly cut up your jalapeño and place the slices on top of the cheese. Bake your pizza in the oven for 10-15 minutes, or until all the cheese is melted and the edges of the tortilla are brown. Once the timer goes off, voilá! Now you have prepared a personal, spicy mini-pizza in less than 20 minutes that you can eat right off of the foil. If you are feeling a little adventurous you can mix up the recipe by adding any additional ingredients you think would be tasty. Chopped onion, or sliced black olives are both good options, however the pizza is plenty tasty on its own without any additions.
Most of these ingredients can be found easily and for little cost at your local grocery store. I generally shop at Aldi where I can get the tortillas and cheese for a lower cost than Giant, where I’ll go to purchase the pizza sauce and jalapeños. Jalapeños can be found in the produce section of almost any grocery store for just a few cents. Happy cooking!

• 1 jalapeño (per every two pizzas)
